How do I prepare my microgreens?

We only eat the green leaves and part of the stem of the microgreens but not the roots. The way we clean our microgreens are same as we do with our lettuces. I wash them thoroughly, let them stand in water with vinegar for a couple of minutes, and rinse.

The best way to eat microgreens is when they are fresh. I wouldn’t store them after the cut.

  • 1 cup Spinach
  • 1/4 diced sweet yellow onion
  • 1 cup sliced mushroom
  • 1/2 minced garlic
  • 1/4 cup microgreens (for this recipe, I used sunflower and broccoli Microgreens)
  • 1 teaspoon butter
  • Salt to taste

  1. Cook the mushroom, garlic, and onion on melted butter on medium-low heat for 5-7 min on a frying pan with a lid.
  2. Add salt to taste and spinach. Turn the stove off and let the lid on so the spinach will cook with the steam.
  3. In a bowl, beat the eggs with salt to taste. Melt the butter in a frying pan to medium-low heat. Add the mix and let it cook with a lid until the edges begin to set. Flip the omelet to cook on the other side.
  4. Place the omelet on a plate. Fill with the mushroom and spinach mix and add some microgreens to the top. Fold the omelet in half, and Bon appetite.

  2. Add the avocado mix on top of the toast and sprinkle some microgreens on top.

How to make This spring breakfast with microgreens?

  1. Boil the eggs for 10-15 minutes. Let the eggs cool down and peel them.
  2. This bunny is made with two eggs. Take one egg and cut it in half horizontally; this will serve to make a face, feet, and tail. Take the second egg and cut it in half vertically; this will serve to make the body and ears.
  3. I made a face with two flaxseeds for the eyes, the tip of a carrot for the nose, and the tip of green onions for the whiskers.
  4. To make the flowers, I used colored carrots for the top of the flower and celery sticks for the stem.
  5. I added Green Salad Mix microgreens under the bunny and a few sunflowers microgreens beside the flowers.

Useful tips
