In this recipe, I will share how to make hummus from scratch. You can always use canned chickpeas for this recipe. But if you want to make it from scratch here, I will show you how to do it. By cooking your own dried chickpeas, you can avoid any preservatives or additives that canned chickpeas may have.
Benefits of eating chickpeas
Chickpeas are filled with many minerals, potassium, vitamins, and fiber. Also, they are high in proteins bringing a good alternative to vegetarian dishes.
How do I prepare dried chickpeas?
Like any grain legumes I cook, I let them soak for at least 24 hours in water. My grandmother used to say that soaking all grains before cooking helps for easier digestion.
How much do dried chickpeas expand? Chickpeas expand 2-3 times their original size, so make sure to use a big container for soaking.
Soak 3/4 cup of dried chickpeas in a container with water.
Then, I washed the chickpeas really well using a colander and added them to the cooking pot. Add water and let them cook to medium heat until soft; add additional water as needed.
I usually cook them for around 2 hours, but it depends on what kind of stove you have, the pot you use, etc. I also like to add salt to the water for seasoning.

Ingredients for hummus
- 2 cups of cooked chickpeas
- 1/2 cup of Roasted Carrots
- 1 tablespoon of lemon juice
- 1 garlic clove
- 1/4 cup of tahini
- 1/4 cup of olive oil
- 3/4 cup of distilled or filtered water
- salt
How to prepare the best Roasted Carrots Hummus
Preheat the oven to 400°F. Cut the carrots into slices on a cutting board. Place the carrots on the baking mat. Drizzle olive oil and salt. Let it cook in the oven for 40 minutes.
Add the cooked chickpeas and olive oil to the food processor.
Add the lemon juice.
Add garlic, Tahini, water, and salt. Mix well.
The beauty of hummus is that you can always add new flavors to the base recipe. You can add more garlic for more spiciness, add beets instead of carrots or add fresh spices!
