I love green bean casserole made from scratch; this is a great way to add veggies to our table. The creamy sauce, the tender green beans, and the crunch from the onions make a perfect combination of flavors and textures.

What do I need to make this green bean casserole from scratch?

Kitchen Utensils:

  • Cast-iron skillet or frying pan
  • Measuring cup and spoons

Ingredients:

For cream of mushrooms and beans

  • 500g green beans
  • 2 tablespoons salt (for green beans’ water)
  • 2 tablespoons all-purpose flour (I use gluten-free)
  • 1 teaspoon salt (for the cream of mushroom)
  • 1/4 teaspoon ground nutmeg
  • 1 cup milk (I use unsweetened coconut milk)
  • 1 cup of broth (I use vegetable broth)
  • 2 tablespoon butter
  • 2 minced garlic cloves

For fried onions

  • Coconut oil
  • 2 sweet yellow onions
  • 1/4 teaspoon mashed garlic
  • 1 teaspoon salt
  • 1/4 all-purpose flour (I use gluten-free)
  • 2 tablespoons bread crumbs.

How do I make this Green Bean Casserole from scratch?

Wash the green beans and cut the ends. I also cut the green beans in half.

Add the green beans to a saucepan with salted boiling water. Let it cook for 5 minutes. Drain the hot water and place them in ice water. Drain the green beans and put them aside.

Melt the butter in the cast iron skillet and add the mushroom. Let it cook for 3 minutes on medium heat until you see some of the mushroom liquid starts coming out. Add the garlic, ground nutmeg, and salt.

Add the flour, milk, and broth. Mix well and let the sauce cook until it gets a creamy texture.

Add the flour, garlic, bread crumbs, and salt to a separate bowl. Slice the onions thin and mix them with the flour mix.

Heat the coconut oil and fry the onions until getting a crispy gold color. Place them on top of a paper towel to absorb any excess oil.

Combining all the parts

Mix the beans and cream of mushroom into a baking dish. Sprinkle the onions on top. Bake for 15 minutes at 400°F.

Useful tips

  1. Make sure to get the coconut oil really hot before adding the onion; this will make the onion fry well without absorbing too much oil.
  2. For the cream of mushroom, you can mix the flour and milk before pouring it into the skillet, this way gets fewer grumps.
  3. Preheat the cast-iron skillet before adding any ingredient to prevent any food from getting stuck to the pan.

How to keep the beans tender and crunchy?

I like to eat beans that are tender and crunchy. I soak the green beans in cold water after cooking to stop the beans from continuing cooking while I’m preparing the rest of the components of this dish.

Can I change some of these ingredients?

Yes, you can! This is a base recipe so that you can modify the ingredients based on your taste and needs.

  • Broth: You can use chicken, beef, or vegetable broth. Homemade broth is great too!
  • Milk: You can use cow milk, almond, or even half and half. I like creamy coconut milk.
  • Flour: You can use different flours or cornstarch to thicken the cream of mushroom.
  • Garlic: I do like to add natural garlic, but you can always use garlic powder.

Can I bake the onions?

I did try to bake the onions with flour, but it didn’t work for me. Maybe I can bake them with no flour on them, but they will not get the crispiness we are looking for in this dish.

What about if I don’t have breadcrumbs at home?

This is optional, but I like the texture of the bread crumbs on the onions.

I just took a slice of my homemade bread and toasted it in the oven. Then, I crumble it into a food processor.
