I love this dish! Part of my family came from Spain, and this dish is a staple in Spanish cuisine. This homemade recipe has been passed down for generations in my family. My mom used to make it for brunch on Sundays.
It is easy to make, and even though we like to eat it as breakfast with bread and cheese, you can also serve it as lunch or dinner.
What is the difference between Spanish Tortilla, Mexica Tortilla, and Frittata?
Spanish Tortillas and Mexican Tortillas are both delicious, but they are two completely different dishes.
Spanish Tortilla, which some people call “Spanish Omelet,” is made of eggs, onion, and potatoes. Mexican tortillas are flatbreads made with cornmeal or wheat flour.
Frittata and Spanish tortillas have more in common, they are made almost with the same ingredients, and the difference comes in how they finish cooking each dish. Spanish tortillas are flipped to be cooked on both sides. Frittata gets into the oven to finish cooking. Also, Frittatas usually have a more diverse vegetable selection to add.
Why do I bake the potatoes?
Even though the original Spanish tortilla recipe is made with fried potatoes, I prefer to bake the potatoes instead. I love baking my veggies for most of my recipes, so the food gets less greasy.
What kind of potatoes do I use for this dish?
My mom likes to make this dish with Russet potatoes; in my case, I like the creamy taste of the yellow potatoes. I try to buy organic potatoes as much as I can for my dishes.
Can I add different toppings to this tortilla?
This Spanish Tortilla has basic ingredients, but you can always add extra vegetables like spinach, kale, and tomatoes, to mention a few.
What goes well with Spanish Tortilla?
I like to eat Spanish tortillas with homemade bread, cheese, and tomato salad for breakfast or brunch.
For lunch or dinner, we like to serve this dish with a salad like a green salad with strawberries or roasted vegetables.

Ingredients
- 3 Potatoes
- 6 Eggs
- 1 onion
- 1 1/2 teaspoon of butter
- olive oil
- 1/4 teaspoon salt
How do I make this Tortilla?
Peel and slice the potatoes into thin layers. Sprinkle salt and oil. Bake at 400°F for 30-40 minutes, until cooked through but not burned.
Beat the eggs and add the salt.
Peel and slice the onion in julienne style. Add 1/2 teaspoon of butter to a frying pan. Cook the onion on medium-low heat for 5 minutes until it gets soft.
On a frying pan, melt one teaspoon of butter on medium-low heat. Add the eggs, sprinkle the onion, and cover with the potatoes slices. Cook the tortilla with a lid for about 15 minutes or until the base is formed and most of the top eggs are cooked.
Flip the tortilla and let it cook for an additional 5 minutes.
How do I flip the Spanish Tortilla?
This is the tricky part of the process; some people do it with a plate, but I like to use the lid from the frying pan.
With a rubber spatula, go through the side of the frying pan to ensure that the tortilla is loose. Add the lid and carefully flip the tortilla. Let the other side cook for an additional 5 minutes until it is thoroughly cooked.
Useful Tips
- If you are using a cast-iron skillet, you need to heat the skillet before cooking.
- Let the tortilla completely cool down before serving.
- If you don’t want to flip the tortilla, you can always finish the process by cooking it in the oven as we do with a Frittata.
