With the Fall season so close, we start seeing more varieties of winter squash in the supermarket. So, let’s begin the season with this tasty and healthy Amazing Acorn Squash Dip recipe.

This is the time of the year when the leaves of the trees start to change their colors. The beautiful mix of reds, yellow, orange, brown, and green colors are combined in nature. It is when the temperature starts to cool down slowly, and that is when we begin to see delicious winter squash in the supermarket!

If you know me, you will know that one of my favorite vegetables is winter squash. This includes Pumpkins, Acorn Squash, and Spaghetti Squash, among others. Stay tuned for my Pumpkin Pie recipe!!! My family and friends love it, so that I will share the recipe this fall!

What is the nutrition benefit of Acorn Squash?

Acorn Squash contains magnesium, vitamin C, potassium, and fiber and is high in antioxidants, among other benefits.

How long do I need to cook the acorn squash in the oven to get it softer?

I cook the squash in the oven at 350°F for 1 1/2 hours. I have seen other recipes that cook them at 400°F 40minutes.

How do I know my acorn squash is done?

The skin will turn really dark green, the fork goes through easily, and the inside will get darker yellow as well.

Which oil do I use to prepare this dish?

I use two kinds of oils to make this dish: avocado oil and olive oil. I use avocado oil for baking because it has a higher smoking point, and I use olive oil in the mix because I like its benefits and taste.

What do I eat this dip with?

I eat it with pita bread, vegetables, or better yet, with a homemade cracker! I made these crackers at home with this recipe, “sprouted wheat crackers,” and I used a pumpkin cookie cutter to make it fun and delicious.

Ingredients:

  • 1/2 Acorn squash
  • 2 Carrots
  • 2 minced garlic cloves
  • Avocado oil
  • 1/4 diced sweet yellow onion
  • 1 tablespoon olive oil
  • 1/2 cup filtered water
  • 3 tablespoon cream cheese (I use organic)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves

How to make this Amazing Acorn Squash Dip

Wash the acorn squash and cut it in half. Take the seeds out. Dice the onion and mince the garlic. Preheat the oven to 350°F. Drizzle the acorn with avocado oil and add a little bit of salt—Bake for 40 minutes. Add the carrots, diced onions, and minced garlic, and bake for additional 40 minutes.

Scoop out the squash from one of the halves and add it to the food processor.

Add the carrot, cinnamon, ginger, clove, olive oil, cream cheese, water, and salt into the blender or food processor and mix well.

You can pour the mix onto a plate. I used the other half of the acorn squash as a bowl for the presentation.

Helpful Tips

  1. If you like Acorn seeds, keep them aside and bake them with salt. They made a crunchy topping.
  2. Acorn Squash can be seasoned in different ways. Another way I have made this dip is with tahini to create a hummus taste for the dip.
  3. Let the squash cool down before adding it to the blender.

  2. Wow, Ada! I’ve never tried or even thought of squash dip. But cream cheese and squash and fall spices sounds yummy! It would probably be good as a spread too on some crusty bread. Thanks for sharing this recipe.
