We love this homemade dish, but what not to love! With our busy lives, we sometimes need that recipe that we can make in almost no time and comes with the needed amount of veggies we would like to add to our diet.
There are different ways to make tofu with vegetables. My family loves Asian food so, I will add some Asian flavors to this recipe.

This delicious and simple Tofu with Vegetables is a great zero-waste recipe because you can add any vegetable you may have in the fridge. Perfect for the end of the weekday when you have a small number of vegetables in your fridge that otherwise will go to waste.
How to add flavor to the tofu?
To add more flavor to the tofu, I sprinkle salt before baking it. Also, you can let it marinate for 30 minutes before baking with some of the same flavors you add to the final dish: soy sauce, ginger, and garlic.
What I can serve this tofu with?
I serve this tofu with white rice with a sprinkle of sesame seeds and a green salad with ginger dressing, but you can always add different accompaniments like quinoa, cauliflower rice, or brown rice.

Ingredients
- 1 Block of extra-firm tofu (I use Organic)
- 1 big Broccoli Head cut into florets
- 1/2 yellow sweet pepper
- 2 scallions
- 1 cup sugar snap peas
- 1 cup of cherry tomatoes
- 1/4 sweet yellow onion
- 2 medium carrots
- 2 large garlic cloves minced
- 1/4 vegetable broth
- 4 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 tablespoon honey
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1 teaspoon sesame seeds (optional)
How to make this simple and delicious Tofu with Vegetables
Preheat the oven to 400°F. Add a baking sheet to a baking pan. Drain the water from the tofu as much as possible and cut the tofu into small cubes. Place them on the baking sheet and drizzle a little bit of salt. Let it bake for 30 minutes (15 minutes on each side). It should look golden after being cooked.
Julienne-cut the sweet pepper and sweet onion. Slice the carrots and scallions and mince the garlic.
Add the sesame oil over medium heat on a frying pan. Add all veggies and let it cook for 2 minutes. Stir often.
Add the soy sauce, vegetable broth, ground ginger, honey, garlic, and salt, and let it cook for 5 minutes. Add the tofu and sesame seeds. Let it cook over low heat for 5 minutes.
Useful Tips
- If you are using a cast-iron pan, remember to let the pan warm first before adding anything to it.
- These are only a few suggestions of the veggies you can add to this recipe. You can always add more vegetables like mushrooms, cauliflowers, and green beans among others.
- I sliced the carrots very thin so cook well with the rest of the vegetables.
- You can add red pepper flakes and pepper for a touch of spiciness.
- I like our tofu bake, but you can also cook them on the frying pan with a little sesame oil before adding the vegetables.
