Amazing Pumpkin and Oatmeal Muffins

Oh, pumpkin! So nutritious and tasty! I have to say; I love this homemade muffin recipe. It is kind of eating a pumpkin pie in a muffin but with a lot of nutritional benefits.
It’s so fluffy, and the spices come along really well. You can taste the cinnamon and cloves in each bite.
The pumpkin Puree
Yes, you can use canned pumpkin puree for this recipe, but I prefer fresh pumpkin.
In my previous post, “Delicious Pumpkin and Carrot Soup,” I talked about how I like to buy big fresh pumpkins, peel, cut, and freeze them to preserve them for a more extended period of time. This recipe was made with my frozen pumpkin.
It is so convenient because it is already peeled and cut, so I can take the portion I need; boil it for a few minutes until soft and smashed. I do feel the difference from a fresh pumpkin flavor, and it doesn’t contain any preservatives.

- Muffin Pan
- 2 Medium Bowl
- Whisk
- Measuring cup and spoons
Ingredients
- 2/3 cup pumpkin puree
- 1/2 cup milk
- 2 eggs
- 2 tablespoons coconut oil
- 3 tablespoons maple syrup
- 1/2 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 1 1/2 cups Oats flour
- 1/2 teaspoon ground ginger
- 1/2 teaspoon baking powder (gluten-free)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
How to make these Amazing Pumpkin and Oatmeal Muffins?
Mix all wet ingredients (eggs, milk, vanilla extract, and coconut oil) in a bowl. Leave the pumpkin puree to the end.
In a separate container, mix all dry ingredients (oats flour, baking soda, ground ginger, ground cloves, ground cinnamon, and baking powder). Mix wet and dry ingredients well.
Add the pumpkin puree.
Preheat the oven to 350°F. Divide the mix between the muffin cups filling 3/4 up with the mix. Add seeds (optional). Cook for 22 minutes or until it is well cooked.
Useful tips
- I leave the pumpkin pure to the end so we get some of its texture in the muffin.
- If you are making fresh puree at home, make sure you drain the majority of the water from the pumpkin.
- It’s so easy to make oat flour at home, for full instructions click here.
- Additional ingredients that can be added are shredded carrots and chia seeds among others.
- You can increase or decrease the amount of sweet to adapt it to your taste.
- You can use honey or sugar instead of maple syrup.
- Insert a toothpick in the center of the muffins to check if the muffins are done.
