We love pancakes, and I have used All-purpose Flour all my life. However, with time, I started to change my recipes to healthier alternatives. So, I decided to look at other kinds of flours in the market. That’s when I heard about Oat Flour from a friend and decided to try it on my own Oatmeal and carrot pancakes.

The result came out really well. We liked the taste of these homemade pancakes, and it was healthier than the way I used to prepare them. I have made these pancakes for years now, and the whole family loves them.

Making our food from scratch brings the advantage of trying new and healthy ingredients that add new flavors and nutrients to our table.

Can I make Oatmeal Pancakes with another kind of vegetables?

Yes, I also make Oatmeal Pancakes with spinach, and they are delicious! My first try was with carrots because of the sweetness added to the mix, but we can try different veggies.

Benefits of the Oat Flour

The first thing I learned about Oat Flour was the high amount of fiber it contains. Oat Flour contains 8 grams of fiber vs. 2.7 grams of All-purpose flour. Also, Oats contain Magnesium, Iron, Protein, Antioxidants, and Zinc. In addition, it is easy to make at home!

Can I make my own Oat Flour at home?

Yes, you can make your own oat flour at home! It’s so easy! I just use a food processor and organic Old Fashioned Whole Rolled Oats. Just place the oats in the food processor and let them blend until they form a flour texture.

Note: I have tried other kinds of oats like steel-cut or instant oats, but they didn’t work as well as the rolled oats.

Ingredients

  • 2 cups of Oat Flour
  • 2 eggs
  • 1 carrot (peeled and cut into pieces)
  • 1 tablespoon of sugar (I use brown sugar)
  • 1/4 teaspoon of salt (I use pink salt)
  • 1 Cup of milk (I use 2%)
  • 1/2 teaspoon pure vanilla extract
  • Butter
  • Distilled or filtered Water

How do I make these healthy oatmeal and carrot pancakes?

Prepare the oat flour by placing the oats in a food processor and blending until they form a flour texture. (refer to the how-to above).

Add eggs, carrot, milk, vanilla, sugar, and salt to the food processor and mix well.

Preheat the frying pan and add butter to the pan, so the mix doesn’t stick. Pour a scoop of the mix into the hot frying pan.

Allow the pancake to cook properly, flipping it with a spatula until it turns brownish on both sides.

Useful tips

  • The pancake will turn into a golden/orange/brownish color as we add carrots.
  • Oat flour gets sticky as time passes while cooking; I add water to the mix to soften the mixture. Make sure not to add too much water not to turn too liquidy.
  • I have also tried to add spinach instead of carrots, and we like it! And yes, you will have green pancakes.

  • 1 tbsp Sugar I use brown sugar
