Easy to make Peppermint Brown Sugar Cookies
These easy-to-make peppermint brown sugar cookies are so soft and delicious! Made with gluten-free flour and brown sugar. This is a great holiday baking recipe made from scratch!

I love baking cookies during the holiday season, not only because they are homemade and delicious but also because of the time I spend in the kitchen with my daughter baking together, laughing, and creating new recipes.
Sugar cookies are part of our Christmas baking tradition, and this year we made them extra tasty, adding peppermint to the recipe.
We wanted to make brown sugar cookies this year, but my daughter loves candy canes. So we decided to make sugar cookies with peppermint extract and topped with a mashed candy cane, and let me tell you, it came out so delicious!
The ingredients
Sugar: We use brown sugar, but you can also use coconut sugar, or if you prefer, you can use white sugar as well.
Flour: I use all-purpose gluten-free flour, but you can use whole wheat or regular all-purpose flour.
Vanilla Extract: I like to use organic vanilla extract because I feel the flavor is so distinct and delicious that just adding a little bit will bring all the flavor. You can always use regular vanilla extract or homemade.
Peppermint Extract: This ingredient is optional. Peppermint extract has a strong flavor, so I only use 1/4 teaspoon in the recipe. If you are not a fan of peppermint extract, you can use almond extract or leave the recipe with only vanilla extract.
Butter: I use regular butter, but you can use vegan butter for this recipe.
White melted chocolate: I love white chocolate, but you can always use regular chocolate, which is even healthier. Also, cookie icing will work well to get the candy cane stuck to the cookie.

Ingredients
- 1/2 cup unsalted butter (room temperature)
- 1/3 cup brown sugar
- 1 1/2 cup all-purpose flour (I use gluten-free flour)
- 1/8 teaspoon salt
- 1/2 teaspoon baking powder (I use gluten-free)
- 1 egg
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon peppermint extract (optional)
- White melting chocolate (for decoration)
- Crunched candy cane (for decoration)
How do I make these brown sugar cookies?




- Sift the flour, baking powder, and salt over a small container.
- Mix the butter and sugar well until it gets a creamy texture.
- Add the egg, vanilla extract, and peppermint extract. Then add the dry ingredients in small batches, and mix until everything is incorporated.
- Cover the dough and place it in the refrigerator for 40 minutes.
- Roll out the dough with a rolling pin. Use flour to avoid the dough sticking on the table. Use your favorite cookie cutter to create the design you are looking for.
- Place the cookies on a baking mat and bake for 12 minutes at 375°F.
- Cover the cookie with white melting chocolate so the candy cane can get attached to the cookie.
- Add the crunched candy cane to the cookie.
- You can have fun creating your own designs or just eat it plain.



Useful tips
- I use beeswax food wraps to cover my dough before placing it in the refrigerator.
- Make sure to crunch the candy canes well.
- Because of the extract added to the recipe, these cookies are delicious even without any decoration.
