This homemade creamy and easy-to-make roasted cauliflower is so tasty! Its creamy sauce and melty cheese are the perfect combinations for a nutritious and delicious lunch or dinner.
I remember my mom preparing cauliflower just like this one. The difference is that she boils the cauliflower instead of oven-roasted. My mom is a great cook!
I prefer oven-roasted cauliflower; I find that when it’s roasted, the cauliflower doesn’t get extremely soft. When you add the creamy bechamel, you are left with a delicious cauliflower plate.

Cauliflower has been used in many ways as a rice substitute, pizza crust, to make tortillas and hummus. I have even used it to make my Delicious Vegetarian Wings. This vegetable is rich in Vitamin B, antioxidants, and fiber. It is also a low-carb alternative.
What can I eat Roasted Cauliflower with?
I like to eat my roasted cauliflower with rice and salad, but there are many ways you can eat it. If you cut the cauliflower florets really small, you can add them on top of a fresh-made pasta. The bechamel sauce will create a creamy sauce, and you can top it with parmesan cheese.

- Whisk
- Measuring cup and spoons

Ingredients
- Large cauliflower
- 3 tablespoons of butter
- 3 tablespoons of whole wheat flour
- 1/4 teaspoon ground nutmeg
- 1 teaspoon salt
- Olive oil
- 3 cups of milk (I use 2%)
- Black Pepper (Optional)
- 1 1/2 cup of shredded cheese
- Parmesan cheese
How to make the béchamel
In a saucepan, melt the butter over medium heat.
Mix the flour with the butter
Add the milk
Add the nutmeg, salt, and pepper (optional). Cook until thick.
How to prepare the Roasted Cauliflower
Preheat the oven to 350°F. Cut out the leaves and base of the stem. Wash and slice the cauliflower around 1/2 inch. Place it on a baking dish.
Drizzle olive oil and salt. Bake in the oven for 40 minutes.
After the cauliflower is baked, pour the bechamel and let it bake in the oven for 20 minutes.
Take the tray out of the oven and add the shredded cheese and Parmesan cheese. Let it bake for the final 5 minutes to let the cheese melt.
Useful Tips
- If you like a really thick bechamel sauce, you can add an extra tablespoon of flour.
- You can always use gluten-free flour instead of whole-wheat flour to prepare the bechamel sauce.
- You can make this plate vegan by adding coconut milk to the bechamel sauce. Also, you can add vegan cheese instead of regular cheese.
