This beautiful squash was introduced to me eight years ago by a friend . Now, this is part of our list of recipes we make frequently. Spaghetti Squash is a healthier alternative to pasta and tastes delicious.

What is Spaghetti Squash?

Spaghetti Squash, also called vegetable spaghetti, is a variety of squash with a stringy flesh texture. I was amazed when I cooked this squash for the first time, seeing a spaghetti-like texture coming out of the squash after scraping the surface with a fork.

Better yet, this beautiful and delicious squash contains vitamin B6, vitamin C, and fiber amount others.

Which sauce to add to spaghetti squash?

This squash is as versatile as regular pasta, so you can add different sauces. I used to make a creamy sauce with cream cheese and sweet corn and add it to the squash for my daughter when she was little. You can try different sauces and see which one is your favorite.

What is spaghetti squash primavera?

In the ’70s, there was an American dish called pasta primavera, which consisted of pasta in a creamy sauce with vegetables. In this case, we substitute pasta for spaghetti squash. This recipe doesn’t contain a creamy sauce, but you can always add a delicious bechamel sauce. In my Creamy Roasted Cauliflower recipe, I added how I make my bechamel sauce.

This recipe, similar to my Tofu with Vegetables recipe, contributes to zero waste food. You don’t need the exact ingredients I mentioned in the list of ingredients below. Instead, you can add any vegetables you have in the fridge.

Ingredients

  • 1 medium Spaghetti Squash
  • 1 broccoli
  • 1 sweet yellow pepper
  • 2 carrots
  • 1/2 cup cherry tomatoes
  • 1/4 sweet yellow onion
  • 1 garlic clove
  • 1/2 cup Mushrooms
  • Avocado oil
  • 1/2 teaspoon Salt
  • 1 tablespoon of coconut oil
  • 4 teaspoon parmesan cheese (optional)

How do I make this Spaghetti Squash Primavera?

Cut the spaghetti squash in half and scoop out all the seeds. Sprinkle avocado oil and salt inside the squash.

Place the spaghetti squash upside down on a baking tray and bake in the oven at 400°F for 45 minutes. You know when the squash is ready when it gets really soft on the inside.

Cut the yellow peppers and onion in julienne, and cut the carrots and zucchini into slices. Warm up the cast-iron skillet and add the coconut oil. Add the vegetables and minced garlic clove and cook for 5 minutes to medium-low heat.

Add the broccoli, tomatoes, mushrooms, and salt to your taste. Cook for additional 5-7 minutes.

Pull out the spaghetti squash strings with a fork and add them to the mix with vegetables. Add parmesan cheese on top (optional).

You can use the base of the spaghetti squash as a bowl for presentation or serve directly on the plate.
