Living up north, our summers are short (I will say around 8-12 weeks), so we try to enjoy summer as much as possible. We love to go for long walks in the afternoons whenever possible and try to cook on the grill outdoors or a grill pan indoors.
In our family, summer traditions include grill BBQs and, of course, hamburgers! Today I want to share with you our favorite vegetarian burger recipe.

Ingredients
- 1 1/2 cups cooked chickpeas
- 1/4 cup chopped sweet red pepper
- 1/2 cup chopped sweet yellow onion
- 1 cup of cooked brown rice
- 1/4 cup shredded beets
- 1/2 cup oat flour
- 2 tablespoon coconut oil
- 1/2 teaspoon dill
- 1/2 teaspoon oregano leaves
- 1 teaspoon salt (you can add more or less)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon apple cider vinegar
- 2 minced garlic cloves
How to make these Amazing Chickpeas and Beets Burger
Shred the beets. Chop the sweet pepper and onion. Mince the garlic.
Rough-mash the cooked chickpeas using a potatoes masher.
Cook the brown rice. Add the rice, garlic, beet, sweet pepper, onion, spices, and vinegar into a bowl and mix well.
Add the oat flour, salt, and coconut oil. Mix well and let it rest for 5 minutes. Preheat the grill to medium-low.
Make the patty and put them on the grill.
Let it cook for 5 minutes on each side or until it forms a crusty layer on the outside.

There are unlimited options for toppings, so I will mention the one we use at home. Sometimes I separate all the ingredients on the table for a buffet-style serving so everyone can choose their favorite.

My favorite side dish for this burger
We can’t forget about the burger accompaniments. Fries are a must in our house, but I make them a little bit different. I use sweet potatoes instead of regular potatoes, baking them instead of frying them. To complete this dish, we made a green salad with arugula, tomatoes, a drizzle of olive oil, and salt.
Useful tips
- I always prepare the chickpeas from scratch, but you can use canned chickpeas for this recipe.
- This recipe can be made with white or brown rice. If you are using brown rice, remember it requires more water to prepare than white rice.
- I add salt to the rice while cooking, so it has some flavor.
